I just wanted to take the time to share with you how the bulk beef pricing works.
So, let's jump in right now:
Place an initial deposit so that we will reserve your beef for you.
Whole Beef: $1,500
Half Beef: $800
Quarter Beef: $400
Eighth Beef: $200
We contact you and walk you through the whole process. We harvest, dry-age, package, and freeze the beef from June to August (first come first serve). When we have the finished weight* (see explanation below) of your beef, we calculate and let you know your balance. You pay the balance and pick up your meat or have it shipped. Easy Peasey! But wait! What about the actual price and beef weights. Well, I am so glad that you asked!
Whole Beef: 400 - 480 lbs. finished meat
Half Beef: 200 - 240 lbs. finished meat
Quarter Beef: 100 - 120 lbs. finished meat
Eighth Beef: 50 - 60 lbs. finished meat
Note that the finished beef weights vary. Every beef is different, not like a factory, so the amount of beef that you take home will depend on the actual beef that you get. So, we offer a range of finished weights to give you an idea of what to prepare for, for pricing and freezer space.

Now, this is where the questions usually come. So, let's get to the bottom of it step by step. We will first look at the whole mysterious terminology associated with beef weights. Then, we will talk about these prices. And we will sum it all up by comparing how your total beef price is calculated. So, here we go...
*Ok. Let's tackle the lingo about meat weights. There are different ways to sell beef by the weight, so let's look at each term for the beef weight:
live weight - the actual weight of the beef while alive, includes all the beef including the moo.
hanging weight - (aka. carcass weight) the weight of the hanging carcass of beef. It does not include the organs, head, or moo. It is typically about 60 - 65% of the live weight.
finished weight - (aka. take-home weight) the weight of the finished and packaged beef that you are ready to take home. It does not include the organ meats or bones, those are a bonus. It is typically about 60 - 65% of the live weight.
So here is an example of beef weights in action:
Let's say there is a live beef that weighs 1100 lbs. (live weight).
We harvest that beef and hang it up in the cooler, with a good conversion of 65%. Our hanging carcass weighs 715 lbs. (hanging weight)
1100 lbs. x 0.65 = 715 lbs. hanging weight
Now we process this hanging beef into packages of beef. Our finished beef weight that you will take home is 465 lbs. (finished weight)
465 lbs. x 0.65 = 465 lbs. finished weight
Whole Beef: $5,896 - 7,375
Half Beef: $2,998 - 3,758
Quarter Beef: $1,549 - 1,939
Eighth Beef: $799 - 999
Whole Beef: $7,396 - 8,875
Half Beef: $3,798 - 4,558
Quarter Beef: $1,949 - 2,339
Eighth Beef: $999 - 1,199
So, using Early Bird Pricing and a Whole Beef, we take the low side, 400 lbs. of finished meat times the price of $18.49/lb. of finished meat and come up with the $7,396 for the total amount paid for a 400# finished weight whole beef. The deposit is $1,500, so the balance due at time of pick-up or shipping is $5,896. If the beef is larger, it would be more.
In past years, we sold our bulk beef by the hanging weight plus the processing fee. For the Summer Beef Harvest this year, we are selling by the finished weight (the take-home weight). So yes, this is different, but let me share with you an email conversation that will help sum up the comparison.:

Attached is my last pricing sheet, (June 2024) which shows the beef cost at $6.00#/hanging weight. But the new pricing I received for cow club is saying $18.49. I am just wanting to be sure I am understanding that the cost has tripled.

Hello, Faithful Customer!
Thanks so much for the question, so let's get to the bottom of it. Yes, the cost of beef (for us to buy beef feeders and mama cows) has went through the roof, as well as lots of other inflation for packaging materials and such. BUT No, the cost has not tripled. We have just changed how we offer our beef pricing. Before, it was by the hanging weight (which is the beef carcass hanging weight), plus a processing fee. The actual take home weight or finished weight is 60 - 65% of the hanging weight. Now, to simplify the process, we are charging by the take-home weight (finished weight) of beef only (the processing is already accounted for in the price).
Let me explain by looking at the receipt that you included: You had a 165.5 lb. hanging weight, which in all reality is around 60 - 65% of the actual hanging weight. (You don't want the extra bones and tendons and stuff from the carcass.) So, your take home weight (finished weight) was probably around 99 - 108 lbs. So, combining your total ($6.00/lb hanging weight plus the processing fee) the total that you paid (for your 1/4 Beef) was $1264.91. If you divide that by your finished weight, the price comes out to $12.77 - $11.71 per pound of finished weight (take-home weight). So, I hope that can help you compare apples to apples. (And, sorry, I am a math nerd, so I like to calculate numbers.)
